2 dozen cookies (approximately)


    1 pkg. (14 oz) of Bakers flake coconut. (Their brand is a good one. You can use others if you cannot find Bakers but since this is their recipe I am highlighting them)

    2/3 cup of sugar

    6 Tbl of white flour

    3/4 tsp of salt

    4 egg whites (save the yolks for something else)

    1 tsp of vanilla. (they suggest almond flavoring. I prefer vanilla)

    3 drops (or to your liking of green food coloring). 3 drops is for a half batch. Use more if you are turning the whole bag into green macaroons. It is up to you how green you want them.


    Preheat oven to 325

    Mix coconut, sugar, flour and salt in a large bowl. Stir in egg whites and flavoring until well blended.

    Sprinkle a few drips of food coloring over the dough. Mix. When I do this I do not mix it in completely. I would rather have mine shades of green with some white mixed in but your kids might want to mix it in more thoroughly and have completely green cookies. I will leave the "art of it all" up to you.

    Drop by tablespoonfuls onto a greased cookie sheet. Bake at 325 for 20 minutes or until the edges have a golden tinge to them. Let the cookies sit just a minute and then promptly remove to dry on a rack so they stay crispy on the bottom. In my experience this makes about 2 dozen cookies.
