Parmesan Chicken--NEW

Recipe: Parmesan Chicken--NEW NEW


    It's a great meal for a cold night.



    4 boneless, skinless, chicken breast halves
    4 Tbl of olive oil divided
    1 pound of sliced button mushrooms
    1 clove of garlic minced (jar garlic is fine. 1 tsp)
    2/3 cup of sherry cooking wine
    Salt and pepper to taste
    ½ tsp of Italian seasoning blend
    1 cup of grated Parmesan cheese
    ½ cup of Italian grated cheese blend or mozzarella


    First thing you are going to want to do is pound down your chicken breasts. My easy way is to get out a zipper bag and put a breast half inside. Use your meat mallet and pound down the breast to about 1/3" thickness. This keeps the mess off of your cutting board. Take out the pounded breast and replace it with the next one. Do this until all breast pieces are flattened. Set them aside for a minute.

    Take out a large sauté pan. Put in 2 Tbl of oil and begin sautéing the breast pieces. If your pan is not big enough use two pans or do them in batches of two at a time. On medium high you'll lightly brown the outside of the chicken breasts. Your goal here is not to cook it through, just get it lightly browned. Once the breast pieces are browned, place them in a 9 X 13 ovenproof casserole. They can overlap a bit, if necessary.

    Do not wash the pan. Just place two more tablespoons of oil in the pan and add your mushrooms. Cook again on medium high until the mushrooms begin to brown on the edges and they shrink down a bit. Toss fairly regularly so they all cook at about the same speed. When they are just about done add the garlic, turn down the heat, and cook just one minute more. Do not brown the garlic or it will taste bitter.

    Pour the mushrooms and garlic over the chicken breasts

    Now top the whole mixture with the cheese mixtures and pop it in your oven. Let it bake uncovered for 25 - 30 minutes or until the chicken is done. I check the chicken by cutting a little slice into the thickest part to make sure there's no pink remaining. If there is, continue to bake the chicken a few minutes more until the pink is gone. This just depends on how accurate your oven is and if you're cooking other things in the oven at the same time.

Serving Suggestions:

    You can serve this dish with pasta, potatoes and/or veggies. Simple food that tastes gourmet.
