Recipe: Grandma Claflin's Junk Casserole --NEW NEW
Grandma Claflin is our co-worker Amy’s Grandma. One day Amy heard me saying I wanted to make a casserole for dinner. She offered up Grandma Claflin’s “Junk” Casserole. This is the ultimate comfort food casserole.
Serves 4 – 6
1 lb of ground beef (I use sirloin to keep the fat down)
1 white or yellow onion, chopped
1 Tbl of olive oil
3 heaping cups of wide egg noodles.
11 oz of corn niblets, drained (or fresh corn kernels from two cobs)
2 oz of diced green chilies, drained (this is my addition. You can leave them out if you want to)
1 can (10.25 oz) of tomato soup
2 cups of shredded cheddar (or Mexican blend). (Low fat cheese is an option too)
Preheat oven to 350 degrees.
Boil the egg noodles according to directions on the package and drain.
While the noodles are cooking, in a sauté pan put in the olive oil and then brown the ground beef along with the onions until the beef is no longer pink. Stir often.
When the noodles are cooked and the beef is ready, take out a 9 X 13 casserole and put in all of the ingredients except the cheddar cheese. Stir until blended. Then add the cheese on top. Bake uncovered at 350 degrees for 30 minutes until hot and bubbly.
Add a salad and you have a rounded out meal. This is one of those meals you can pile into a bowl and sit and watch a movie while you eat it.
