Southwestern Chipotle Nuts
Recipe: Southwestern Chipotle Nuts
Makes 8 cups.
4 cups whole pecans (You can use bulk or from the baking section.)
4 cups whole large cashews (Same thing; bulk or from the can.)
Olive oil spray
1 to 2 Tbl (or to taste) Urban Accents Mesa Rosa Chipotle Rub*
*A word about the rub. Urban Accents Mesa Rosa Chipotle Rub can be found in many gourmet stores. You can also buy it direct from Urban Accents by going to their website, www.urbanaccents.com. It was actually less expensive to buy it in the store than on-line but, if you can't find it in your city, on-line is an option.
A rub (usually used for meat) that has Chipotle in it without the addition of lots of cayenne is not easy to find. This nut recipe is meant to be more smoky than spicy. If you like your nuts hotter, you can use a different rub with Chipotle in it that has plenty of Cayenne, or add your own.
Toss the nuts in an ovenproof pan (9 X 13 will do or use a cookie sheet with sides). Spray liberally with the olive oil spray. Sprinkle on the rub. You are just trying to coat the nuts. Stir and spray the nuts again. Keep tossing the nuts around so you get plenty of the rub stuck to the nuts.
Roast at 375 degrees for 12 to 13 minutes. Watch to see a few of the top nuts beginning to get a little browned edge on them and you'll know they are done. Your kitchen will also fill with a wonderful smoky aroma. Let them cool and store in airtight container.
