Pineapple Sorbet

Recipe: Pineapple Sorbet


    Here's a low-fat, refreshing sorbet to serve in your ice cream "boat" or even a champagne flute. (See also "Ice Cream Boat.")


    1 cup pineapple puree (take fresh pineapple chunks and whiz them in your food processor to make puree)
    1 egg white
    2 tsp lemon juice
    1/4 tsp liquid sugar substitute


    Blend all of the ingredients in your food processor until thick and fluffy. This is going to take about 2 to 3 minutes. Freeze the mixture in an ice cream machine according to your machine's directions. Voila! If you want more flavors you can also make this with mango, strawberry, cantaloupe, papaya, raspberry and more.

    This tastes dreamy right out of the ice cream maker and is best eaten right then. It does not do well in the freezer for very long. When it freezes it gets sort of "fuzzy" and breaks up.
