Italian Chicken on Angel Hair Pasta

Recipe: Italian Chicken on Angel Hair Pasta


    This is an easy meal to make. Just assemble and bake.

Serves 2. (Can be multiplied for a crowd.)


    2 chicken breast halves (skinless is fine)
    1 egg beaten in a shallow bowl
    1 cup Italian bread crumbs in another shallow bowl
    2 tsp olive oil
    2 tsp butter
    1 jar (25 oz.) red spaghetti sauce (You choose the brand and the flavor combination you like; 25 oz. will cover 2 to 4 people, depending on how much sauce you like.)
    1/2 cup milk
    2 slices mozzarella cheese (deli slices like they use for sandwiches)
    2 slices Swiss cheese (deli)
    1/2 cup grated fresh parmesan
    Angel hair pasta for two (You decide how many carbs you want.)


    Take out your medium-sized sauté pan and melt the butter and oil. While the butter is melting, dip each chicken breast in the egg and then the bread crumbs to coat. Toss them around a couple of times and lightly press down on them to get as many crumbs to stick as possible. Place the coated breasts in the olive oil, butter combo and cook on Medium until both sides of the chicken are browned. This should take 5 to 8 minutes. (You're not trying to cook the chicken all the way through. Just brown the outside.)

    While the chicken is browning, take out a 9-inch square heat-proof glass pan. Pour the spaghetti sauce in the bottom of the pan. Pour on the milk and slowly mix the sauce and milk together until the milk disappears into the sauce.

    When the pieces of chicken are ready, place them on top of the spaghetti sauce. Cover each breast with a piece of mozzarella and a piece of Swiss cheese. Cover the pan with aluminum foil and bake at 350 degrees for 45 minutes.

    While the chicken is in the oven, put on a pot of water to boil so you can make your pasta.

    When the chicken is finished, remove it from the oven, take off the foil and sprinkle on the parmesan.

    Put your pasta in the boiling water. Angel hair only takes 2 to 3 minutes to cook.

    Drain your pasta.

Serving Suggestions:

    Put a portion in the middle of each plate. The cool thing is to put your chicken on top of the pasta and then surround the chicken and pasta with your sauce. You might want to garnish with parsley. You can also serve a Caesar salad on the side or some other veggie.
