Recipe: Lemon Sugar Cookies

3/4 cup butter, softened
1 package of lemon cake mix
1 cup yellow cornmeal
2 Tbsp finely shredded lemon peel
Coarse sugar or regular granulated sugar
Preheat oven to 375 degrees. In a large mixing bowl, beat butter and egg with an electric mixer on medium for 30 seconds. Gradually beat in cake mix until combined. Stir in cornmeal and lemon peel. (If you want your cookies bright yellow, add a few drops of yellow food coloring.)
Roll dough into one-inch balls. Roll in sugar. Place on ungreased cookie sheets about 2 inches apart. Bake 9 to 10 minutes until lightly browned on the bottom. Let cool on the cookie sheet for 1 minute so they don't fall apart when you take them off. Cool.
