Recipe: Zola's Nuts (LC)


    (LC) = Lo-Carb Zola's Nuts make a wonderful holiday gift. I package them in a special box (see pictures) with a note to my colleagues, friends and/or family. The note tells the story of Zola and Zola's Nuts. The personal touch has rewarded me with more Thank You cards for gifts than I could have ever imagined. In this time of mass-production, people really notice when a person takes time to make something and to tell a story. Call this my version of a "family holiday newsletter"--only this one is edible.


    1 can of whole cashews
    Olive oil spray
    3 tsp of Worcestershire sauce (or more to taste)
    1/2 tsp of salt
    1/2 tsp of onion powder
    1/2 tsp of cayenne (or to taste)


    Pour the nuts into an oven-proof pan. Spray nuts with oil and toss. Sprinkle on the seasonings and toss thoroughly. Roast in your oven at 375 degrees for 10 to 12 minutes. When you start smelling the wonderful aroma, or when you spy a little browning on the edges, take them out of the oven. Now toss one more time. Cool on paper towels. You can even eat them warm and really savor the coating.
