Beans on the Side or as a Sauce

Recipe: Beans on the Side or as a Sauce


    This recipe works two ways with just a slight variation. Whenever I'm asked to bring the beans to a picnic, I bring these. I also make a sauce using just the black beans and puree half of it to make a sauce that can go with dark meat, chicken, pork, or even fish.

Serves 12 - 15. For a smaller group, you can also cut this recipe in half easily.


    Picnic Beans

    3 Tbl olive oil
    1 onion chopped
    1 red pepper cored and chopped
    3 cans Kuner black beans
    2 cans Kuner Southwestern beans
    1 can Kuner beans with diced jalapeno
    2 cups red wine (any inexpensive one will work)
    2 tsp cumin
    1 tsp chipotle chili powder (regular chili powder will work)
    2 tsp salt


    sauté the onion and red pepper in the olive oil on medium heat until soft. Add the rest of the list. Bring to a boil. Reduce heat to medium and cook for 15 min. or until the beans thicken to your liking.

    Bean Sauce

    Follow the directions for the picnic beans. Puree one half of the beans so it becomes a sauce and pour it back into the whole beans.

Serving Suggestions:

    For a bean sauce, serve a puddle of the sauce with your grilled fish or meat on top.
